Corned Beef Hash and Egg Breakfast Squares Recipe (1)

My love affair with corned beef hash has started a long time ago when I was just a little girl. #HowDoYouHash #CollectiveBias

On days off school my mom would take us to this awesome dinner for breakfast. It was my favorite. A bunch of old grumpy guys, metal stools and a real counter like in the moves.

We were allowed to order ANYTHING we wanted and I always ordered the corned beef hash. I’ve never been a sweet breakfast girl. I’ll take savory, flavorful, fill you up hash over sugar drenched waffles any day.

On one trip to the dinnerthe hash was a little different. The waitress mentioned that they had started making their own recipe instead of the can. All this time I thought my “dream breakfast” was some fancy kitchen concoction.

But it ended up being even better in a way since now I was able to buy the one I loved and have it whenever I wanted. Ikid you not,to this day you will always find a can of HORMEL® MARY KITCHEN® Corned Beef Hash in my cupboard. Told you love affair!

My favorite way to eat it is cooked on a griddle with a couple of fried eggs so the yolks are all nice and runny in the corned beef but I thought I’d fancy things up a bit today with a super easy entertaining friendly Corned Beef Hash and Eggs Breakfast Squares recipe.

These have all the same flavor but bump it up a bit in presentation.

Ingredients

  • Refrigerated Crescent Roll Dough (2 tubes)
  • 1 Can HORMEL® MARY KITCHEN® Hash (or you can use 2 cups of homemade corned beef and potato hash)
  • 8 Eggs
  • Salt and Pepper to taste
  • Green Onions and Parsley (optional)

Directions

  1. Preheat oven to 400F
  2. Unroll the dough and separate into two squares. Roll up the edges of each square.
  3. Scoop about 1/4 of the can of HORMEL® MARY KITCHEN® Hash onto each square.
  4. Top each square with 2 eggs and sprinkle with salt and pepper.
  5. Bake at 400F for 12-15 minutes until the dough is browned and eggs are cooked to your liking. Note that the eggs might still look very wet but will be cooked just pull them out and touch them the first time you make it. Also they may keep cooking a bit while they sit on the pan. These pictured were cooked for 17 minutes and I wish I had taken them out a bit sooner since the whites and yolks were totally set. Still delicious but I you should just know the eggs will seem really wiggly due to the baked nature but they will be cooked.
  6. Sprinkle with green onions and parsley if desired. These can be served fresh and hot or room temp.

This makes 4 hearty servings. You could even split them up to get 8 smaller servings for a lighter breakfast or if you are serving it with other items.

A fun way to do that would be just to make one long sheet and cut them after they are baked or just make smaller rectangles!

My youngest, now 24, has had a love affair with Mary Kitchen corned beef hash since he was a toddler. We have an original can of it before it was bought by Hormel. It sits in the pantry with a note that says ” do not eat” display only! I sent this post to him.

I love corned beef hash but have never tried this brand – it’s going on my grocery list. My mom used to make corned beef hash from the leftovers of her New England boiled dinner ( corned beef, potatoes, carrots, turnips, onion, rutabaga – hate turnips and rutabaga – as a little girl I couldn’t tell the difference in appearance between the potato and the turnip, but when I put it in my mouth – YUCK). I have fixed eggs with the hash before and liked it – so I’m going to try it again. The recipe sounds good but I can’t eat gluten/wheat, so I’ll just stick to the hash and eggs. Thanks for the reminder about hash and I’ll look for the brand to try.

FAQs

Why won t my corned beef hash get crispy? ›

It takes patience to get crispy hash. In a heavy skillet (preferably not a non-stick skillet) over medium heat, spread the hash in an even layer and do not disturb for 5 minutes. With a spatula, lift up a corner of the hash to see if it has developed a crust. If it hasn't, cook a few minutes longer.

Is corned beef hash healthy to eat? ›

While it provides protein and nutrients like iron and vitamin B12, corned beef is relatively high in fat and sodium. It's also a source of certain compounds that may increase your risk of cancer.

How to make canned corned beef taste better? ›

Sauté bacon, bell pepper, onion, and garlic in a large skillet over medium heat until bacon is cooked and onion is translucent, 8 to 10 minutes. Mix in corned beef hash and mushrooms. Season with salt and pepper. Cook, flipping sections of the hash occasionally, until browned, about 10 minutes.

Does canned corned beef hash need to be cooked? ›

MARY KITCHEN® hash is fully cooked and ready to eat.

Does corned beef get more tender the longer you boil it? ›

Information. Corned beef is made from one of several less tender cuts of beef like the brisket, rump, or round. Therefore, it requires long, moist cooking. Corned beef is safe once the internal temperature has reached at least 145 °F, with a three minute rest time, but cooking it longer will make it fork-tender.

Why does my corned beef always come out tough? ›

Cooking over a high temperature.

High heat is not a friend to brisket. When cooked at a boil for too long, corned beef is likely to turn out tough and chewy, rather than soft and tender. Do this instead: Regardless of the cooking method, corned beef is best cooked over low heat.

Is corned beef healthier than hamburger? ›

In addition, raw beef (sodium- 66 mg per 100g) also has a lower sodium content than corned beef (sodium- 973 mg per 100g). Therefore, with higher nutritional values and lower sodium content, regular beef is healthier than corned beef.

Can a diabetic eat corned beef? ›

Processed meats are extremely high in salt, however, and should be avoided because excess sodium can strain your kidneys and raise your blood pressure. Examples of processed meats include deli meats, bacon, jerky, sausage, corned beef, pepperoni, and hot dogs.

Is it OK to eat corned beef hash raw? ›

To Fry: Corned beef hash is fully cooked and ready to eat, but we do recommend heating and browning before serving. Slice through casings and cut into patties, remove casing and brown on both sides.

How to spice up canned corned beef hash? ›

1/2 teaspoon of Creole (Cajun is hot) seasoning turns canned hash into delicious. Mix it in well and fry as normal.

What do you eat with corned beef hash? ›

Corned beef hash is often topped with a poached or fried egg. It also pairs perfectly with traditional Irish side dishes, such as Irish soda bread and colcannon.

Can I eat corned beef straight from can? ›

Canned corned beef is already cooked. It is safe to eat straight from the can. You'll probably improve the texture by warming it up, and you'll probably improve the flavor by browning it a bit in a hot skillet. But technically, you don't NEED to do any of that.

Can you eat corned beef hash by itself? ›

This is a classic corned beef hash with potatoes and onions. It's great on its own, but even better with eggs!

How do you crisp corned beef hash from a can? ›

Heat the skillet over high heat until hot, add a thin layer of oil. Spread the corned beef hash in a large patty shaped oval, about an inch thick. Turn the heat to medium-high and let it fry for about 4-5 minutes. Peek and see if it looks brown.

What is the white stuff in corned beef hash? ›

According to a contributor on Stack Exchange's Seasoned Advice, a forum for chefs, the white substance is also a combination of water and collagen. The fact that beef brisket has a high percentage of collagen-rich tissue and fat, according to the Los Angeles Times, suggests that there is some weight to these claims.

Why is my corned beef hash soggy? ›

You're not cooking it long enough

Canned corned beef hash is one of those dishes that seems to take absolutely forever to crisp up. And once it does, it quickly turns from crisp to burnt. (It's like avocados — they're green one day and mushy the next.)

Why are my hash browns not crispy? ›

You'll want to remove as much moisture as possible because this will prevent your hash browns from getting as crisp as possible. All the water will just create steam and as any additional starch is released from the potato it's going to get gummy, just not as gummy as before. So get them dry!

Why is corned beef so mushy? ›

If the meat is actually mushy then I suspect that it was packed with a meat tenderizer as well as the corning salt and seasonings. If this is the case then there isn't much you could have done differently. Just don't buy that brand next time. Better yet, next time, corn it yourself.

What to do if corned beef is too dry? ›

Simmer in liquid. Just like for burnt meat, if your meat gets tough and dry then you can simmer it in a little bit of broth for a couple minutes. Don't allow it to overcook again but just allow the liquid to penetrate the meat.
