Everybody loves a good deviled egg. Especially at Super Bowl time. Its the perfect hand held party popper to start the game off—it also buys you some time in the kitchen preparing all the other Sunday goodies! But what if I told you that I have invented something even better than the good ol’ American deviled egg? You’d probably say “You can’t reinvent the wheel…” but I kinda did with this one. Deviled Egg Bites using the silicone egg bite molds. This means no peeling eggs!

Also…I hate bland deviled eggs. Have you ever been to a party and bit into a bland egg with no punch—no tang? The balance of all the flavors will surely impress your guests! You can even top these off with pickled jalapeño slices if you want a more Southwestern Theme for your eggy delights.

  • 14 Large Eggs
  • ¾ Mayonaise
  • 2 Tablespoons Sweet Pickle Relish
  • 4 Teaspoons Dijon Mustard
  • ¼ Teaspoon Onion Powder
  • ¼ Teaspoon Kosher Salt
  • Paprika
  • Chives, finely chopped

Method

  • 1)

    For this recipe, you’ll need two silicone egg bite molds and some ramekins or a pie dish that will fit into your Instant Pot. This recipe can easily be halved if you only have one egg bite mold. Spray or brush a light coating of oil into each compartment of the silicone molds.

  • 2)

    Each time you crack an egg, place the egg whites into one of the individual compartments in the mold and place your egg yolk into a ramekin or a pie dish that can hold all the egg yolks. I used ramekins that were 3.4 inches in diameter and it’s best to only put 3 or 4 egg yolks per ramekin (when I tried do 5 egg yolks in the ramekins they were a little under done).

    Wrap up the silicone molds and ramekins well with foil to avoid getting water on the eggs. Place 2 cups of water into your Instant Pot and place the trivet into it. Stack the silicone molds on top of the trivet and the ramekins or pie dish with the egg yolks onto of the silicone mold.

  • 4)

    Seal the Instant Pot with the lid and make sure the knob is set to Sealing. Choose High Pressure / Manual and set the time for 6 minutes. After the cycle is done and your hear the beep, wait an additional 6 minutes then switch the nob to Venting to release all the pressure.

  • 5)

    Using oven mitts, carefully remove the ramekins and egg bite molds. Set aside the egg whites to cool and transfer the egg yolks to a large bowl. Mash the egg yolks very well, this ensures that you’ll end up with a smooth filling.

  • 6)

    Add ¾ cup Mayo, 2 Tablespoons Sweet Pickle Relish, 4 Teaspoons Dijon Mustard, ¼ Teaspoon Onion Powder and ¼ Teaspoon Kosher Salt to the bowl of egg yolks. Mix very well until the mixture is smooth, you can also use a mixer to help with this step. Place the mixture into a piping bag fitted with a large Open Star Pastry Tip (there’s a link to the one I used below)

    Once the egg whites are room temp, carefully remove them from the silicone molds and place them on your serving plate.

  • 8)

    Pipe the filling on top of each egg bite and garnish with chopped chives and paprika. Enjoy!

    This is such a smart idea! I have the silicon containers, love deviled eggs but hate uncentred yolk holes in the egg! I will definitely do this for my next party!

    Very creative idea!
    I think doing a quick blend of the egg whites with some spices (chorizo spices would be awesome) first would be a neat idea too.

      Thanks PJ! Adding some spices would be awesome, just stir them into the egg whites gently – if you whisk or blend the egg whites, they will puff up when you cook them, and they won’t be in that cute shape.
