Without further ado, let’s get to it!

- 1 tablespoon olive oil
- 1 pound ground beef (or substitute with ground turkey or pork)
- 1 small onion, chopped
- 3 cloves of garlic, minced
- 4 cups chicken or vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) tomato sauce
- 1 can (6 oz) tomato paste
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/2 teaspoon sugar (optional, to balance the acidity)
- 8 lasagna noodles, broken into small pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves, torn (for garnish)

1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned, breaking it up into smaller pieces with a spoon.

2. Stir in the chopped onions and minced garlic, and sauté until the onions are softened and translucent.

3. Add the chicken or vegetable broth, diced tomatoes, tomato sauce, tomato paste, dried basil, dried oregano, salt, black pepper, and sugar (if using). Give everything a good stir to combine.

4. Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 20 minutes, allowing the flavors to meld together beautifully.

5. Meanwhile, cook the broken lasagna noodles according to package instructions until al dente. Drain and set aside.
