Leche Flan (Caramel Custard) is my family’s all time favorite dessert. The decadent custard topped with the smooth caramel is such a delight to the eyes as well as to the palate. This recipe of leche flan with cream cheese takes this popular Filipino dessert to another level. The sugar was caramelized first in a loaf pan on the stovetop and then set aside to cool for a bit. Creamy custard was afterwards poured over the hardened sugar and then steam baked for one hour and 20 minutes. The creamy and dense custard with caramel glaze was irresistibly delicious. Indulge!

Leche Flan with Cream Cheese

Ingredients
- 1 cup granulated sugar
- 5 large eggs
- 4 oz cream cheese, softened
- 1 can (370 ml) evaporated milk
- 1 can (300 ml) sweetened condensed milk
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350° F.
- Place sugar in a 5X9 inch loaf pan over medium heat and cook, stirring occasionally until sugar has dissolved and caramel in color. Remove pan from heat and set aside to cool for 5 minutes.
- Meanwhile, in a blender, combine and process eggs, cream cheese, evaporated milk, sweetened condensed milk and vanilla until smooth.
- Pour mixture into prepared pan. Place it in another, larger, shallow baking pan and set it in the middle shelf of the oven. Pour enough hot water in the bigger pan to come halfway up the sides of the loaf pan.
- Bake for l hour and 20 minutes or until top is set. Allow to cool to room temperature before refrigerating for several hours or overnight. Run a clean knife around the edge before inverting onto a serving plate.
- Serve and enjoy!

Can I use llanera for making the recipe? If yes, how much leche flan can I make with this recipe and do I have to change the temperature?

Hi Shiela,
I have not used a llanera to make this recipe. My guess is that this recipe can fit in one llanera ( if not, use a second one) and bake it using the same method (water bath) at 350 degree F. After 1 hour , check if the top is set, adding more time as needed. Hope these help!Reply

Hi Jessie,
I baked this leche flan uncovered until set. Using a rectangular pyrex should work but it is going to be a challenge to follow step 2. I f using a pyrex, you can omit step 2 and just cover bottom of pyrex with maple syrup (instead of caramelized sugar). Baking time may vary, so adjust accordingly. Hope these help!Reply

The recipe calls for 5 whole eggs but a viewer was asking what’s the adjustment if she uses egg yolks only. I first replied:” You can try using 4 egg yolks instead of 2 whole eggs”. It should be: “You can try using 4 egg yolks instead of 5 whole eggs”. I already fixed the mistake. Thanks for clarifying.Reply

Shouldn’t be more than 4 egg yolks since the requirement was 5 whole eggs? Omitting the egg whites from 5 eggs would make the quantity much less. So I was assuming, around 10 egg yolks? I also do not like using the egg whites as it makes my flan spongy instead of thick and creamy. Thanks in advance for clarifying this.

Ate Liza, do i need to adjust the temp after pre-heating? I just tried your recipe yesterday but i used electric steamer instead of oven the outcome was totally different haha..the texture was nearly grainy haha..i need to try again till i get the same as shown in tbe photo.

Hi Salvador,
No, you don’t need to adjust the temperature after preheating. As for the texture being grainy, try blending the ingredients well until smooth. And lastly, if you are using an electric steamer, cooking time may be longer. Steam the leche flan for 1 hour and 20 minutes first and then add more time if needed.Reply

If you are using a tray (12 eggs), you can use 2 cans of condensed and 2 cans of evaporated milk. The texture of the flan and baking time may change though so adjust accordingly. Hope this helps!Reply

Hi! Can I use a different baking pan for this? I was planning to make it with a round 9″ aluminum & to add macapuno as well. Any suggestions on how long I should bake it? Thanks so much!

I have not tried using a round pan for this recipe but I think it should be okay. As for the amount of time for it to bake, try baking it for 1 1/2 hour first and then add more time if needed until the top is set. Hope these help!

If you double the recipe or change the measurements, try steam baking it first for 1 hour and 20 minutes. Then check if top is completely set or use a toothpick for doneness. Add more baking time, if needed. Hope this helps.Reply

Chef Ron Bilaro,from whom I adapted this recipe from, used a steamer to cook his leche flan. He steamed it for 1 hour and 45 minutes on medium heat or until it set. Hope this helps. Enjoy and have a happy new year 🙂Reply
