Apple Coleslaw

Most coleslaws, at least the ones I am used to in the UK come laden with lots of creamy mayonnaise which is high in fat. You have to admit though, that Creamy Coleslaw does taste darn good.

Here in the US/Canada coleslaw tends to be more vinegary and sweet and can be aweird one to get accustomed too.

A great trick for adding some sweetness to coleslaw is by adding some grated apple. Use a crisp sweet tasting apple - I used a lady Aliceas it was what I had at the time and it worked perfectly.

Vegetables for Coleslaw

For the shredded vegetable part of this Apple Slaw, I just grabbed a bag of kale slaw, it's a combination of shredded broccoli stalks cabbage and kale. Which adds a delicious crunch.

If you want to shred some cabbage and vegetables yourself, then, of course, you can do that too. But for a slaw recipe that is nice and quick like this Apple Slaw, the bagged kale slaw was perfect.

To make it creamy, I use a mixture of light mayonnaise and yoghurt. The yoghurt just stretches the small amount of mayonnaise that little bit further.

It really is a simple and quick recipe for a perfect apple slaw that you will just love.

As well as serving it as a side, I've been known to just dig into a bowl of this Apple Slaw all on its own, because it really is that darn good - YUM!!

How to store Homemade Coleslaw

I like to keep mine in a lidded tub and place in the fridge.

It should keep about 3 days in the fridge but mine never last much beyond that anyway, as it's used up fast especially in the summer when we are having lots of barbecues.

You may get a little separation because of the yoghurt and lemon juice, but I just stir it all up before serving and it's fine.

Creamy Apple Coleslaw

Sweet Tangy and Creamy Apple Coleslaw - a delicious lighter coleslaw recipe that is a perfect side dish for grilled meats and barbecues.

Ingredients

  • 3 cups of kale slaw (or use shredded raw veg of choice)
  • 1 large crisp apple, grated
  • ½ cup (8 tbs) of 0% greek yoghurt
  • juice and zest of half a lemon
  • 2 tbs of light mayonnaise
  • pinch of salt and black pepper

Instructions

  1. Add the yoghurt, lemon juice, zest, mayonnaise and salt and pepper to a bowl and whisk till all combined and creamy.
  2. Add in the grated apple and vegetables and toss till coated.
  3. Taste and season with more salt and black pepper as needed.
  4. Dig in and enjoy!!
