Panna cotta: the classic recipe
Soak 10 g of fish gelatin sheets in cold water.
Meanwhile, heat 100 ml of milk without boiling it. Squeeze the fish-gelatin and dissolve it in the milk. Separately, heat half a liter of fresh cream and add 100 grams of sugar stirring it well to melt it completely. Join the two compounds and pour everything into an aluminum mold rinsed with ice water. Let it cool first outside the fridge and then in the fridge for about 5-6 hours. Serve the panna cotta on a serving plate with sauce toppings.

There is a super-fast variation of the classic recipe. Simply remove the milk and dissolve the sugar and fish gelatin (softened in water) directly into the hot cream. Perfect for those who don't feel like dirtying more than one pot!
