FAQ's

What makes a Smashburger special?

The key to a great Smashburger is in the name- you want to make sure you smash it! This creates a nice crust on the outside of the burger that seals in all the juices and flavors.

What is the difference between a smash burger and a regular burger?

A regular burger is usually just cooked on a grill or in a pan, while a smash burger is smashed onto the grill or into the pan giving it a crispy crust.

How do you make Smashburger sauce?

To make the sauce, simply mix together all of the ingredients in a small bowl. Then, just refrigerate until you are ready to serve.

Things to know

  • Make this creamy sauce ahead in a storage container for up to a week in the fridge.
  • Before you use your sauce, give it a good stir to make sure it hasn't settled.
  • If you don't have smoked paprika on hand, you can use regular paprika instead.
  • An 80/20 mix of ground beef is my choice for a burger. I love a good grilled burger patty, then topped with melty American cheese, maybe a little red onion and some sweet pickles. Slather the top of the bun with this special sauce - AMAZING!

Variations

  • A splash of Tabasco sauce or Sriracha sauce adds a nice zing to the burger sauce!
  • For a little bit of sweetness, try adding a teaspoon or two of honey.
  • If you want a creamier sauce, add some sour cream or Greek yogurt.

Storage

Refrigerate - Store the Smashburger sauce in an airtight container for up to 1 week.

Freeze - I do not recommend freezing this sauce as mayonnaise does not freeze well.

  • I love putting dill pickles on my homemade smash burgers, this time I'm changing up my burger recipe and using this Refrigerator Pickles recipe instead. These pickles make the best burgers if you ask me!
  • This easy-to-makeTomato Relishis the perfect condiment for all burgers!

FAQs

What is Smashburger sauce made of? ›

Their recipe calls for: ½ cup Hellman's mayonnaise, 1 Tbsp. Dijon mustard, ¾ tsp. Heinz ketchup, ¼ tsp. kosher dill pickling brine, and a pinch of cayenne pepper.

What makes a Smashburger so good? ›

Minced chuck steak is gold for Smash Burger. Secondly, it's the smash that really makes it. When you smash the burgers down on a super-hot grill, the fat has nowhere to go but back up into the burger patty meaning you're essentially cooking your burger in its own beefy juices.

What is the best seasoning for smash burgers? ›

Seasonings – I like to use a combination of salt, pepper, paprika, Worcestershire, and Tabasco sauce. In addition, finely minced bacon makes it into my best smash burger recipe. Cheese – American cheese is used for the smash burger. Buns – Classically, potato buns are used, but I prefer brioche buns.

How do they make a Smashburger? ›

Place a cast iron over medium-high heat. Preheat the pan until hot and then add about a teaspoon or two of oil. Add two patties, spacing them about 4 inches apart, and then smash them flat with a spatula to form patties that are 4-inches in diameter. Cook until the edges are brown and craggy, about 2 minutes.

What kind of sauce does Smashburger have? ›

This sauce is the stuff of dreams, a harmonious blend of mayo, ketchup, mustard, pickle relish, and a dash of secret spices. It's the finishing touch that takes your burger from ordinary to extraordinary, elevating every bite into a symphony of flavors that'll have you coming back for more.

What oil does Smashburger use? ›

What oil do you use in your kitchens? We currently use butter on the grill, beef tallow/canola oil in our fryers, and a blended oil on our Smash Fries. To see the full list of offerings, please visit www.smashburger.com and select the “Menu” tab at the top of the page and then select "Nutrition".

What is the best meat to use for Smashburger? ›

To make good smash burgers, it's important to:
  • Use ground chuck, or 80% lean ground beef; anything leaner will make the burgers dry.
  • Be sure the patties are very cold before cooking.
  • Smash the burgers immediately when you put them in the pan, and don't smash them again.

What is the best beef for smash burgers? ›

Ground beef.

The magic of the smash burger (that crisp, caramelized crust) comes from the combination of high heat and the high fat content of the burger. Because of this, smash burgers don't work as well with a leaner ground beef, so aim for an 80-85% meat to fat ratio. Ground chuck would also work wonderfully here.

Why do people put mustard on smash burgers? ›

In-N-Out places its burger patties on the flat-top griddle then spreads about a teaspoon or two of yellow mustard on the uncooked side just before flipping. The mustard caramelizes on the griddle, softening that piquant quality mustard can have, and creating an even crispier crust as the burger patties get smashed.

Why do smash burgers taste different? ›

Since most of the meat is pressed down onto the grill and browned, you're getting more Maillard goodness than when cooking a regular burger. Remember: maximum browning equals maximum flavor.

How do you keep a smash burger juicy? ›

If you don't want to lose juices, you must smash within the first 30 seconds of cooking. When ground beef is cold, its fat is still solid and its juices are still held firmly in place inside small, chopped up segments of muscle fibers.

Do you flip a Smashburger? ›

Don't flip the patty too soon. You are cooking it mainly on one side. Searing that side and making it crispy on that hot griddle is the goal here. You know you're ready to flip when the meat is almost cooked through with very little to no pink.

Do you need oil for smash burgers? ›

This is the traditional, griddled hamburger of diners and takeaway spots, smashed thin and cooked crisp on its edges. It is best to cook in a heavy, cast-iron skillet slicked with oil or fat, and not on a grill.
